Deep Water & Dark Soil is a two-day luxury immersion into Tasmania's food and wine culture. Day one is all about water: a private charter down the D'Entrecasteaux Channel to a private oyster lease, where guests shuck and eat oysters straight from the sea, paired with Tasmanian sparkling wine. Day two turns to earth with private access to a Derwent Valley truffle farm or heritage orchard, followed by a closed-door tasting with a boutique, cult-status winemaker who has no public cellar door.
